A whole wheat tortilla combined with your favorite plant-based cheese, beans, and some crumbled Beyond Meat make quite the amazing vegan quesadilla. As I mentioned on our collection of vegan recipes, it is an amazing time we live in because of the sheer amount of plant-based options the food industry has been able to create. Years ago, the idea of a plant-based cheese was unfathomable. Yay for the 21st century! 

Vegan Mexican Beyond Meat Quesadilla Recipe

DESCRIPTION

This super simple quesadilla recipe makes any day of the week an easy and fun lunch or dinner for you and the family. Add any vegetables to increase the fiber!

INGREDIENTS

  • 3 cups Beyond Meat beef crumbles
  • 4 whole wheat or regular tortillas, 10” (burrito tortillas)
  • 1 1/3 cups plant-based cheddar cheese (Daiya is a good option)
  • 1/2 cup canned black beans, drained and rinsed
  • 2 teaspoons avocado oil
  • 1 cup Trifecta broccoli
  • Optional:

  • Favorite salsa

INSTRUCTIONS

  1. Working one or two tortillas at a time, sprinkle ⅓ cup plant-based cheddar cheese on one half of the tortilla, along with ⅛ cup beans, ¾ cup Beyond Meat crumbles, and ¼ Trifecta broccoli. If Beyond Meat is frozen, feel free to microwave all of it for 2 minutes. You can do the same with the broccoli. Keep all the goods on one half moon side.

  2. Fold the other half over the side with the sprinkled goods. Repeat process for all four tortillas.

  3. Warm-up a nonstick pan and spray with oil over medium-low heat. Toast both sides of the quesadilla for about 2-3 minutes, adjusting the heat as needed. The goal is to get both sides golden brown but also help the quesadilla guts warm and melt the cheese. The dairy-free cheese may not melt all the way but only ever so slightly.

  4. Cut each quesadilla into even quarters and if desired, serve with about ¼ cup of your favorite salsa. Enjoy!

  • The salsa and any additional add-ons will increase calories.
  • Sodium may be high due to the ingredients used.
