I have been testing and trailing this Thai peanut sauce for a year now. I've had multiple different versions of it but I was not happy with any... until now! This delicious and creamy Thai peanut recipe is the perfect backbone recipe for any Thai inspired dishes you may want to create.
This recipe is meant as an inspiration for you to combine your Trifecta chicken with your favorite Trifecta starches and vegetables. Though the recipe calls for peanuts, I used Trifecta almonds to decorate this delicious recipe (as seen on the pictures). The spicy almonds rounded this dish incredibly well! Use this Thai peanut chicken recipe as your inspiration to create fun and creative dishes! Whether a wrap, a cold sandwich, a bowl, a spicy bowl, or just have the spicy chicken with your favorite vegetables… This recipe is super versatile.
INGREDIENTS
Thai Peanut Sauce:
INSTRUCTIONS
In a bowl, mix all the sauce ingredients. Whisk to incorporate. Conversely, if desired, add all ingredients into a food processor and pulse 3-4 times. Transfer to an airtight container.
Dice chicken and transfer to a large mixing bowl. Add carrots. Pour the sauce on top of the chicken and mix to coat.
Warm a non-stick skillet over medium-high heat. Spray with oil and once the pan is hot and oil is shimmering and beginning to slightly smoke, add the chicken coated in the sauce.
Sauté 2-3 minutes, adjusting the heat as needed, until warmed through. Taste a piece of chicken to see if the chicken is ready. Serve in a plate with favorite sides, portioning about 5 ounces of chicken mix per plate.
Season with peanuts, almonds, sesame seeds, cilantro, and/or chili flakes.
