Is there anything better than a bite of sweet, tangy, refreshing fruit salsa with some grilled chicken or fish? Don't think so! To keep the summer vibes alive all year long, I've created this simple pineapple-papaya salsa recipe to bring some life into your weekly meal prep. Ready in less than 10 minutes, this sauce pairs well with Trifecta chicken and fish and makes a great topping for classic meals. Heck, go crazy and put it on steak, whatever floats your boat!
How to Make This Salsa
This recipe supplies twelve servings total - 2 tablespoons per serving.
To make this salsa, you are going to need the following fresh ingredients:
- 1 cup Papaya, small diced
- 1 cup Pineapple, small diced
- 1 Shallot, minced
- 1/2 cup fresh cilantro
- 1/2 cup fresh parsley
- 1 teaspoon fresh turmeric, peeled, grated
- 1 teaspoon fresh ginger, peeled, grated
- 1/2 tsp black pepper
- 1 tsp honey
- Chili flakes (optional)
To save even more time, swap out fresh pineapple and papaya for canned pineapple or pre-chopped fruit.
Kitchen Needs:
- Large mixing bowl
- Spatula
- Sharp knife
- Cutting board
Step One
Dice pineapple and papaya into small pieces, all roughly the same size and shape. Combine in a bowl or Tupperware container (with lid) and set aside until you're ready to dig in (more on this later).
Not interested in breaking down a pineapple? Try canned or pre-cut fruit. You can also sub in diced apples, mango, peaches or just stick with straight pineapple.
Fun fact: Pineapple and papaya contain digestive (proteolytic) enzymes that may help you digest and absorb protein more efficiently (1,2,3).
Step Two
Mince shallots. Keep on a bowl. If using red pepper flakes, add them to the shallots.
Wash, drain, and pat dry the herbs. Remove the thick bottom part of the stems and discard. Finely chop (chiffonade) your cilantro and parsley. Combine herbs and shallots in the same bowl along with the oil. Set aside.
Step Three
Peel and grate fresh turmeric and ginger root and add to the fruit mixture.
Season with black pepper and mix everything together.
Step Four
Once ready to dig in, in a separate bowl, combine your desired amount of fruit mixture with the herb and oil blend and enjoy (ideally a 2:1 ratio of fruit to herbs)!
Pro Tip: Keep your fruit mixture separate from oil and herb blend. The pineapple and the papaya have enzymes that can cause a change in flavor.
